Lipase is an enzyme obtained from the submerged fermentation of a high lipase producing microbial strain with advanced after-extraction process. It can catalyze grease α and β bond, hydrolyse triglycerides or fatty acid esters to produce monoglycerides or diglycerides and free fatty acids, hydrolyse natural oils into fatty acids and glycerol, catalyse lipid synthesis and lipid exchange reaction at the same time.

Enzyme activity unit definition: At a pH of 7 and temperature of 30 ºC, 1 g solid enzyme ( or 1 ml liquid enzyme) hytrolyse substrate to produce 1 umol titratable fatty acid, as enzyme activity unit , state as u/g (or u/ml).
